A creamy Italian pasta dish with eggs, cheese, and pancetta. This traditional recipe creates a rich, silky sauce that coats every strand of pasta.
Bring a large pot of salted water to boil and cook spaghetti according to package directions, reserving 1 cup of pasta water before draining.
While pasta cooks, dice the pancetta into small cubes and cook in a large skillet over medium heat until crispy, about 8-10 minutes.
In a large bowl, whisk together eggs, grated cheese, and black pepper until well combined.
When pasta is done, drain and immediately add to the skillet with pancetta, tossing to combine.
Remove from heat and slowly pour the egg mixture over the hot pasta, tossing quickly to prevent scrambling.
Add reserved pasta water a little at a time if needed to create a creamy sauce.
Season with salt and additional pepper to taste. Serve immediately with extra cheese on top.
